Monday: Chicken and Broccoli Shells and Cheese from Love Grows Wild
Ingredients: Shell pasta, broccoli, chicken breast, unsalted butter, flour, milk, chicken broth, garlic powder, pepper, salt, sharp cheddar cheese. Maybe I'm odd that I ALWAYS buy broccoli and chicken at the grocery store - but really, it goes with everything. You should definitely add it to your shopping list. Anyway, this recipe is super easy, super fast, and it only uses TWO pots! One if you're being really lazy like myself. Also, what toddler doesn't like chicken and broccoli smothered in cheese? What ADULT doesn't like chicken and broccoli smothered in cheese? I challenge you to name one.Tuesday: Baked Salmon with Parmesan Herb Crust from Add a Pinch
Ingredients: Garlic, parsley, and parmesan cheese. Uh, can you get any easier? Seriously, if you don't already have salmon in your freezer just trot on down to your local Costco and get their frozen salmon filets. I LOVE fresh fish - but these taste really fresh! They are perfect for crazy nights. Then, go ahead and make this amazing (less than 20 minutes I might add) recipe with a side of sautéed brussel sprouts and your family will think you're a gourmet chef. Why hello, supermom.Wednesday: Chicken Stuffed French Bread from Life in the Lofthouse
Ingredients: French bread, cooked and shredded chicken breasts, colby-jack cheese, green onions, and ranch dressing. Even if you don't have these ingredients on hand, a VERY quick trip to the store will fix that. Your children will adore you for making them such a savory and delightful meal, while your husband will applaud your skills in the kitchen. Add a side of carrots and celery to add in a few more veggies! As well if it's a truly crazy night, I think you could definitely substitute a rotisserie chicken for the chicken breast. The taste will be a little different, but it will be quite a lot less prep for you!Thursday: Salsa Verde Chicken and Rice from Kevin & Amanda
Ingredients: Chicken, olive oil, rice, chicken broth, and salsa verde. Seriously, this recipe will take you like 30 minutes. You are going to be SET. To amp it up a little bit you could definitely add in some black beans or even grab some taco shells and make it a fun taco filling! Seriously, what could be better? Kid and husband friendly.
Friday: Quinoa Enchilada Casserole from Damn Delicious
Ingredients: Quinoa (obviously, but you could probably do rice if you needed to!), can of mild enchilada sauce, a can of chopped green chiles, frozen corn, canned black beans, fresh cilantro, cumin, chili powder, salt and pepper, cheddar cheese, mozzarella cheese, avocado, and roma tomatoe. Guys, I have made this and it is seriously DELICIOUS and FILLING. The two greatest words in all humankind. (Just kidding. But really.) If you don't make it this week, make it sometime. You won't be disappointed. And, if your hubby and kiddos are really against the no-meat thing I'm sure you can toss in some of that left-over rotisserie chicken we talked about earlier ;)
